cooked carrot salad

Ingredients :

* 1 ib of carrots * 1 garlic clove * 1 teaspoonful of paprika * 1 level teaspoonful of cumin

* 2 soupspoonfuls of vinegar * 1 handful of chopped parsley * 1 soupspoonful of groundnut oil * salt

Preparation: 

Peel the carrots, remove the heart and cut either in rings or lengthways. Wash and cook in salt water with a clove of garlic. Strain when cooked, season with the above spices, add the parsley, and mix gently so that the carrots are not broken up. Leave to get cold.

Aubergine salad

For 1 ib of aubergines the preparation and ingredients are the same as the cooked carrot salad but omitting the parsely,rather small aubergines should be chosen, and they should be cut in 4 lengthways, including the stalk,witout being peeled.leave to get cold beforeserving.
