cos lettuce and orange salad
Ingredients :
* 2 cos lettuces * 2 oranges * the juice of a third one * 2 soupspoonfuls of lemon juice
* 1 good soupspoonful of caster sugar * 1 soupspoonful of orange-flower water
* 1 teaspoonful of groundnut oil * 1 pinch of salt
Preparation:
Use only the hearts and tender leaves of the lettuces. Wash thoroughly and drain. Pile the leaves one on top of the other and cut them into thin strips, about 1/10’ (3 mm) wide. Add salt, sugar, orange-flower water, lemon and orange juice, oil. Mix and add the oranges (sliced with the pith removed). Serve very cold.
Lemon salad
Thinly peel 2 very ripe lemons, put whole in a little salt water and place on one side. Chop a small bunch of parsley, add a teaspoonful of paprika, a pinch of ground chilli, 1/2 teaspoonful of cumin, 5 or 6 violet olives (machcouq), 8 black olives (all stoned), 3 soupspoonfuls of groundnut oil and enough salt to season.
Then take the prepared lemons and press out the juice. Do not throw them away. Cut the lemons up in pieces the size of the olives and mix well all the ingredients, adding half of the lemon juice. Serve at once.
