feggous salad
The feggous is a variety of cucumber which is long, thin and often curved. It is much drier than the ordinary cucumber. Wash 1 lb of feggous. Taste the tail-end of each fruit and throw any bitter ones away. Grate with a fine grater, add a pinch of salt, a teaspoonful of crushed zaater (a kind of thyme). 2 soupspoonfuls of vinegar and 2 soupspoonfuls of sugar. Mix and serve cold.
