fresh kidney-beans salad

Ingredients :

* 2kg (4 lbs 7 oz) of fresh kidney-beans * 2 teaspoonfuls of paprika * 1 crushed garlic clove

* 5 soupspoonfuls of groundnut oil * 1 handful of chopped coriander * 3 soupspoonfuls of lemon juice

* 1/2 pickled lemon (zest only) * 6 or 7 preserved olives * salt

Preparation: 

Take the shoots off the kidney-beans but do not peel them. Put in a thick-bottomed saucepan with salt, garlic, paprika and oil. Cover with water to prevent the kidney-beans from becoming discoloured.

When they are almost cooked add the chopped coriander and when completely cooked the lemon juice, olives and lemon zest cut in pieces. Leave to boil down until the sauce is creamy.

Bind if necessary with a teaspoonful of flour mixed with a little water. Leave to simmer a few more minutes, taste to check the seasoning and remove from the heat. Arrange on a dish and decorate with the olives and lemon zest. Leave to get cold.
