fried sweet pepper and tomato salad
Wash and wipe 4 peppers and 4 tomatoes. Fry first the peppers then the seeded tomato halves in boiling oil in a frying pan. Peel the vegetables carefully when fried. Cut the peppers in 2 lengthways and arrange, alternating with the tomatoes, on a dish. Then prepare the following sauce.
* 4 soupspoonfuls of the frying fat * 3 soupspoonfuls of lemon juice
* 1 level teaspoonful of cumin * salt
Add salt, mix well and pour over the dish. Sprinkle with chopped parsley and leave to cool.
