ingredients :
- 1 kg (2 lbs 3 oz) of marrows
- 1 good teaspoonful of paprika
- 1 chopped garlic clove
- 4 soupspoonfuls of groundnut oil
- 1/2 teaspoonful of cumin
- 2 soupspoonfuls of lemon juice
- salt
Cut the marrows in 4 lengthways without peeling them. Seed them and cut into 2 cm (1’) cubes. Wash and put in a saucepan with salt, garlic, paprika and oil. Cover with water and leave to cook. When the marrows are cooked, add the cumin and lemon juice. Leave to boil down until the sauce is creamy and take off the heat. Serve cold.
