saalouk salad

Ingredients :

* 2 aubergines * 3 to 4 medium-sized marrows * 4 sweet peppers

* 4 tomatoes * 2 small hot peppers * 3/4 ladleful of groundnut oil

* 1 level soupspoonful of paprika * salt

Preparation: 

Cut up the courgettes and aubergines small without peeling them. Wash and put in a saucepan with salt, oil, paprika and the crushed garlic. Cover with water. Then peel the tomatoes, remove the seeds and cut into 4, and add to the contents of the saucepan. Leave to cook on a moderate heat, stirring from time to time.

When almost cooked, add the grilled peppers which have been washed and diced. Leave to boil down, stirring all the time, until there is no liquid left. The salad can be eaten hot or cold and keeps for 2 or 3 days.
