salad of slaouia marrows
Ingredients:
* 1kg (2 lbs 3 oz) of marrows * 1 teaspoonful of paprika * 1 garlic clove
* 4 soupspoonfuls of groundnut oil * 1 good pinch of cumin * 2 soupspoonfuls of vinegar * salt
Preparation:
Scrape the green skin off the Slaouia marrows carefully then cut in half lengthways and remove the seeds. Cut into small dice. Wash and cook with salt, oil, paprika, garlic and a glassful of water. Bring to the boil and lower the heat. Watch over the marrows as they cook and add a little water if necessary. When they are cooked add vinegar and cumin and leave to boil down until all the liquid has evaporated. Take off the heat and leave to get cold.
