Ingredients for 6 peopIe :
* 1 1/2 kg (3 lbs 5 oz) of meat (mutton chops and shoulder or veal knuckle)
* 1 level teaspoonful of ginger
* 1 gook pinch of saffron
* 4 medium-sized grated onions
* 3/4 ladle ful of groundnut oil
* 1 teaspoonful of paprika
* 1 level teaspoonful of cumin
* 1 handful of chopped parsley and coriander
* 10 preserved olives
* 1 pickled lemon
Preparation:
Cut the meat up into pieces weighing about 150 g (5 oz). Rinse and put in a thick-bottomed saucepan with salt, ginger, saffron, grated onion and oil Cover with water and cook with the lid on. Stir from time to time and add water if necessary.
When the meat is almost cooked, add the parsley and coriander, the paprika and cumin. Leave the sauce to boil down until it becomes thick and the meat is cooked and breaks off easily in the fingers. Add the lemon juice, the pickled lemon zest, cut in pieces, and the preserved olives. Boil for a few seconds, check the seasoning and remove from the heat, Serve the meat on a round dish decorated with the pickled lemon zest and olives and cover with the sauce. Serve hot.
