meat tajine (tiab l'sane)
Ingredients for 6 to 8 people :
* 1 1/2 kg (3 lbs 5 oz) of meat taken from any part of mutton or veal joints
* 2 onions * 1 teaspoonful of paprika * 100 gr (4 oz)of butter
* and after the meat is cooked: * 1/2 teaspoonful of cumin
* 1 heaped teaspoonful of crushed coriander seeds * 1/2 teaglassful of vinegar
Preparation:
Cut up the meat into pieces the size of a hen’s egg. Rinse and put in a thick-bottomed saucepan with salt, grated onions, paprika and butter. Cover with water, and cook with the lid on, stirring from time to time. Add water if necessary.
When almost cooked, add the cumin and crushed coriander seeds, together with the vinegar. Boil down to a thick sauce. Remove from the heat when the meat is cooked and can be broken off easily in the fingers, Serve very hot in a slaoui tajin.
