mrouzia tajine
This dish which is rich with savoury spices, both pungent and mild, can be kept in a refrigerator for several days.
Ingredients for 6 to 8 poeple :
* 1 1/2kg (3 lbs 5oz) of meat * 300 g (11 oz) of stoned raisins * 200 g (7 oz) of almonds
* 2 medium-sized grated onions * 1 level soupspoon ful of ras el hanout
* 1 heaped teaspoonful of ginger * 1/2 teaspoonful of saffron (mixed packet saffron and crushed flowers)
* 1 heaped teaspoonful of cinnamon * 200 g (7oz) of butter * 1 ladleful of honey
Preparation:
Cut the meat up in pieces weighing about 150 g (5 oz), rinse and drain. Mix the Ras El hanout, ginger, saffron and pepper with a little water, Coat the meat with half this mixture and put it in a thick-bottomed saucepan. Add salt, butter, skinned almonds and grated onions. Cover with water. Cook with the lid on stirring from time to time. Add water if necessary.
Clean and rinse the raisins and leave to steep in the other half of the spice mixture, When the meat is almost cooked, add the honey, raisins and cinnamon. Remove from the heat when the meat breaks off easily in the fingers and the sauce is rich, Arrange the meat on a round dish with the raisins and almonds on top. Cover with the honey sauce and serve.
