Tagine with artichokes and peas

Ingredients: 
 
* 1kg meat
* 1 onion
* 4 crushed garlic cloves
* 1/4 glass oil
* salt and pepper
* some saffron
* 1/2 teaspoon ginger
* 1 peeled and diced tomato
* juice of 1/2 lemon
* water
* 200g peas
* 1 kg artichokes

Preparation:

Seal meat in saucepan with oil, onion, salt, garlic and diced tomato. When onion sweats add spices then stir until golden mixture.
Add water necessary to cover all ingredients. Cover and cook over moderate heat for 30min, Add peas and cook under cover for more 10min. Re-add water if necessary.
 
Thin out the leaves of artichokes, take off chokes and keep hearts in water with lemon juice added. Put them in saucepan and add lemon juice then simmer about 10 other minutes.
